Grow Like a Laser Not Like a Mushroom

Ahoy all,

I was wondering if Australia had any interesting mushrooms..not those kind of mushrooms! I mean the other edible kind you put into an omelette! I checked out http://www.oz-mushrooms.com.au/ and it looks to me that Aussie’s really like their fungi.

Did you know that mushrooms can:

5. Be a good source of fiber without a lot of calories

During the month of June of each year, Australian Mushroom Growers host Mushroom Mania to celebrate the shroom. More than 1450 cafes, restaurants, bars and pubs around Australia join in on the Fun-Guy-Fun.

Angry Mushrooms on Toast

250g Mixed Wild Mushrooms (ceps, girolles, chanterelles, trompette de mort, morels)
250g Chestnut Mushrooms
1 Tablespoon (15ml) Olive Oil
1 Clove Garlic
Salt
Pepper
Sprig of Fresh Thyme
Squeeze of Lemon
Pinch of Cayenne Pepper
Dash of Tabasco Sauce
Chopped Parsley
A Hunk of Rustic Bread
Butter

Brush away (or dab with a sheet of kitchen towel) any loose dirt – you should NEVER wash mushrooms as they are so incredibly porous; they’ll instantly soak up any water. Slice the mushrooms in halve or quarter the smaller ones so you end up with an array of similar sized pieces.

Melt olive oil in a decent size frying pan and add a clove of garlic, finely chopped. Soften, then add the mushrooms.

Fry gently at first as they will start to release quite a lot of liquid, season with salt and pepper, a couple of sprigs of fresh thyme, and then just before serving, a squeeze of lemon juice and if you like a kick, a pinch of cayenne pepper or the merest dash of Tabasco.

A scattering of chopped parsley is optional.

A rustic loaf with quite open texture (like ciabatta in Italy or an artisan made “boule” loaf in France), rubbed lightly with a bulb of raw garlic, then drizzled with olive oil. A hunk of an English cottage loaf, toasted and spread lusciously with butter works equally well.

Pile the hot mushrooms on top and eat immediately.

Oh yes…so original! You are awesome, love your blog, and I am still voting for you! I am not a huge fan of mushrooms, but at least I can appreciate them a little more! Good luck! Not too much longer!
